Coconut Bread Recipe
This was a great way to use the remaining pieces of this bread. I was also happy when my DH liked the bacon more than the original bacon because it was not all fat. Score one for Turkey Bacon! We are still not winning on the burger front though, but one day, it will happen.
If you've never made French Toast before it's very easy. You have a dish, bowl or tray to put your beaten egg into. You dip the bread into the egg, and roll over and cover with egg, and then place the covered bread into a fry pan with melted butter, and you fry it up. Only this time I used coconut oil instead of butter since I did not have Ghee, and Brummel and Brown yogurt butter does not fry well.
There are some sites out there that have discussed Coconut oil as an aid for fertility, Natural Fertility Info. They also mention it in this post Healthiest Oil on Earth I've also seen it encouraged as a healthy oil in other PCOS and Insulin resistance diets Therapeutic Diet for Insulin Resistance. It is good to remember that even coconut oil should not be consumed when it it hydrogenated.
I will keep my eyes and ears open for more information regarding all things coconut, but for now I'm confident in using it in my cooking.
When it comes to turkey bacon not all brands are equal - make sure you read the backs and compare one brand has lower fat, cholesterol and salt than its competitor.

looks delicious! did the bread hold up well? When i made the coconut bread originally, the bread was a bit dry. Could have been because i didn't make it right. :(
ReplyDeleteI always read labels, but yes not all brands are equal. I should have added the cinnamon since it does help with insulin. But I used the SF syrup instead.
ReplyDeleteThe bread was delicate, and I had to use a spatula to flip it over in the egg mixture. But after using the spatula it was fine. My bread wasn't dry exactly, but crumbly, like a corn bread texture. You do need to let your bread cool before eating though, otherwise it is more dry. I'm not sure why that is, but reheating is fine, and does not cause it to get more dry.
