Lemon Muffin & Recipe helps
Lemon Muffin - (Neutral on all steps)
1/2 C or 4oz Almond Flour
1/2 C Flax Meal - I used soy flour instead since I did not have flax meal
1 tsp baking powder
1/8 tsp salt
1 C Splenda granular
1 tsp poppy seeds
2 Tbsp light butter
1 tsp pure lemon extract
1 tsp vanilla
2 Tbsp light cream
2 Tbsp water
2 eggs
Stir together dry ingredients. In a separate bowl, melt the butter (maybe 20 seconds in the microwave). To the butter, add the extracts, cream and water. Combine with the dry ingredients. Stir with a wooden spoon until well blended. Spray 6 muffin tins with cooking spray with butter (or other cooking spray). Bake at 350 degrees (or 325 if using a convection) for 15-20 minutes until tops are golden brown. Cool 5 minutes on rack before removing from the pan.
